500 grams boneless chicken (Cut into bite sized pieces)
1/2 cup fresh yogurt
1 teaspoon ginger garlic paste
1 teaspoon red chilli powder, garam masala, lemon juice and Kashimiri red chilli powder to add colour
1/2 teaspoon turmeric powder
2 tablespoon cornflour
1 tablespoon rice flour
Salt according to taste
1 tablespoon oil
8 to 10 curry leaves
2 Green chillies
1 tablespoon chopped garlic
1/2 teaspoon red chilli paste or powder
In a large bowl, mix fresh yogurt, along with ginger-garlic paste, all the mentioned spices, salt, lemon juice, corn flour and rice flour. Then add chicken pieces and coat them well. Cover and rest for at least 30 minutes. This is the point where that exotic flavour is going to begin it's journey.
Heat oil in a pan on medium heat. You can either shallow or deep fry the marinated chicken until it turns in golden brown and crispy. Now take out it from oil and place it on absorbent paper. (This is for healthier option, air fry or pan-fry with minimal oil.)
In a separate pan, heat a little oil. Add some chopped garlic, curry leaves and green chillies. Let it all crackle and release their aroma. This step gives your chicken 65 its restaurant style magic.
Add fried chicken to the tempting and toss gently. Sprinkle some lemon juice according to your desire and taste, serve hot and take the all appreciation!
