Option 1: Light Vegetable Khichadi (No Heavy Lentils)

This is not the recipe of a typical heavy khichadi, which we are sharing today, this version is light, easy to cook & digest and of-course, perfect for dinner.

Quick Recipe:

Ingredients:

  • 1/2 cup rice (washed)
  • 2 tablespoon moong dal (Washed)
  • Vegetables (What you like but healthy ones, such as peas, carrot, cauliflower etc.)
  • 1 tsp ghee
  • Cumin & fenugreek seeds, turmeric powder, salt, hing and chopped fresh coriander.
  • Chopped green chilli

Steps of Preparation:

Step 1: Heat ghee in a pressure cooker, add hing, cumin seeds and fenugreek seeds.
Step 2: Add green chilli, then all the veggies you chose and then saute lightly.
Step 3: Put the rice and dal together, saute well.
Step 4: Add turmeric powder, and then add water.
Step 5: Put the salt and close the lid, let a whistle come and then off the flame. At the end, garnish it with fresh coriander.

Watch out the texture, as it should be slightly mushy.

Option 2: Vegetable Tehri

This is kind of our comfort food, the days when we feel hungry and want nutrition too, but don't feel like cooking for hours.

Ingredients:

  • 1 Cup Rice (Washed)
  • Veggies (Which you like to have)
  • Onion, Tomato, Green Chilli (Finely Chopped)
  • Spices, Salt, Turmeric, 2 tablespoon oil or butter
  • 5-6 Black Pepper, Bey leaf, 3-4 Cloves, Cumin seeds
  • Ginger, garlic and cumin seeds paste
  • Soya Chunks
  • Fresh coriander leaves (Chopped)

Preparation:

Step 1: Heat the oil in a cooker, add Bey leaf, Black pepper, cloves, cumin seeds and chopped green chilli and onion.
Step 2: Then add ginger-garlic and cumin paste, saute well.
Step 3: Add tomato and other veggie along with soya chunks.
Step 4: Add rice, then turmeric and other spices with salt.
Step 5: Mix well, after 2-3 minutes, put water again mix.
Step 6: Close the lid, and let it give a whistle, then off the flame.

After opening the lid put some fresh coriander and butter, and savour leisurely is dinner with your family.
